<p>The word &#8220;biscotti&#8221;  applies to any type of biscuit, and originates from the Latin word <em>biscoctum</em>, meaning &#8220;twice-baked&#8221;: it defined biscuits baked twice in the oven, so they could be stored for long periods of time, which was particularly useful during journeys and wars.</p>
<p>Biscotti were a staple of the diet of the Roman Legions. The word was eventually imported into English as &#8220;biscuit&#8221;. Biscotti is derived from the word &#8220;bis&#8221; which in Italian means twice and &#8220;cotto&#8221; meaning cooked.</p>
<p>Now, you have the background of this delicious morning coffee accompaniment, but how about making some healthy biscotti, Cook Yourself Thin style?</p>

<p><em>Makes about 1 1/2 dozen</em><br />

<p>3/4 cup all-purpose flour<br />
1/4 cup finely ground almonds<br />
3 tablespoons Dutch-process cocoa powder<br />
3/4 teaspoon baking powder<br />
1/4 teaspoon salt<br />
1 large egg<br />
1/3 cup sugar<br />
2 teaspoons pure vanilla extract<br />
1/2 teaspoon almond extract<br />
1/3 cup dried cranberries<br />
Melted chocolate for drizzling</p>

<p>1. Preheat oven to 350 degrees and arrange a rack in the center of the oven. Line a baking sheet with parchment paper.</p>
<p>2. Whisk together flour, ground almonds, cocoa powder, baking powder and salt in a medium bowl.</p>
<p>3. Beat egg and sugar with a handheld or standing mixer on medium-high speed until pale and thick, about 5 minutes.</p>
<p>Beat in vanilla and almond extracts. Reduce speed to low, and gradually add flour mixture. Beat until no traces of flour remain. Stir in cranberries.</p>
<p>The dough will be very wet and sticky.</p>
<p>4. Scrape the dough onto the prepared baking sheet, forming a thick line in the center.</p>
<p>Wet your hands and pat dough into a 9-x-3-inch rectangle. Bake until puffed and dry to the touch, about 25 minutes.</p>
<p>Cool on pan for 15 minutes; keep oven on.</p>
<p>Peel off parchment and carefully transfer rectangle to a cutting board. Cut crosswise into 1/3-inch-thick slices.</p>
<p>5. Lay slices flat on unlined baking sheet, and bake until dry, about 10 minutes.</p>
<p>Flip slices and bake for 10 minutes more. Let cool completely. Cookies will crisp as they cool.</p>
<p>6. Drizzle with melted chocolate if desired.</p>

<p>You don&#8217;t need to be a top chef to write and publish a cookbook on the internet. You just need the will, some great recipes and the occasional helping hand. </p>
<p>Writing a cookbook is no different to producing any other kind of do-it-yourself manual, because in the end that&#8217;s really all it is. </p>
<p>No matter how many recipes it contains, or cooking lessons, or simply cooking hints and tips, in the end it&#8217;s pretty much a formula that you can easily follow. </p>
<p>What you do need to do is write something that is original in content and will grab the imagination. </p>
<p>The last thing the world needs is just another recipe book. If that&#8217;s all it is people won&#8217;t buy it. It has to have something extra, such as an interesting and original niche. </p>
<p>As an example, a couple of years or so ago Southern cooking was all the rage and people were buying up ebooks about cathead biscuits and collard greens. But that&#8217;s over now and the internet&#8217;s cooks have moved on. The trick is not to follow them, but to lead them to something fresh. </p>
<p>As a cook yourself you probably have an area of cooking that you particularly enjoy, or which may be an extension of something else. For example, if you are a trout fisherman you might be able to combine a book on how to cook trout with hints on trout fishing. </p>
<p>Someone who does a lot of outdoor cooking must have a wealth of information to pass on and although this has been done already, there is still room for improvement. </p>
<p>One idea that springs to mind is a cookbook on using the leftover coals of a charcoal barbecue. It has always struck me they could be used to slow bake some pies, or bread or whatever and a recipe book based on that would, I am sure, get read. </p>
<p>Cookbooks don&#8217;t have to be based on the latest trend in food preparation, far from it. Collections of recipes from previous generations, World War 2 cookbooks and even books on old kitchen methods, especially if they can be made to seem relevant to today&#8217;s modern cook, all find a ready audience. </p>
<p>You don&#8217;t even need to have all this information at your fingertips. There is a vast amount of it freely available on the internet and in your local library&#8217;s reference section. What you do not already know you can learn, compile into a comprehensive whole and publish. </p>
<p>Just be sure to do a little research to see what your competition may be. You could be in for a surprise. Your family recipes might be not only unique, but an excellent way of filling a gap in the market. Some of the most sought after cooking articles are on diabetes, picky eaters, budget cooking, nutrition, cooking for the sick and elderly and so on. </p>
<p>If you have any expertise at all in any one of these niches you will find a ready market for your book. </p>

<p>1/2 teaspoon salt<br />
1 large head of broccoli, about 1 1/2 pounds, cut into small florets<br />
3 cloves garlic, peeled<br />
3/4 pound rigatoni<br />
1 tablespoon olive oil, plus more for pan<br />
1 pound Italian-style turkey sausage with fennel (removed from casing if uncooked or thinly sliced if precooked)<br />
1 can cannellini or Great Northern beans, rinsed and drained<br />
2/3 pound skim mozzarella, grated, 1/4 cup reserved<br />
3/4 cup skim ricotta cheese<br />
1/2 cup chicken stock</p>
<p>1/2 cup Pecorino Romano cheese, finely grated, 1/4 cup reserved</p>
<p>1 teaspoon salt<br />
1/2 teaspoon ground pepper<br />
3 tablespoons breadcrumbs<br />
1 tablespoon olive oil</p>
<p>1. Preheat oven to 375 degrees. Lightly oil a 9-x-13-inch gratin or baking dish.</p>

<p>2. In a separate pot, bring water to a boil and add 1/2 teaspoon of salt, broccoli and garlic. Simmer the broccoli and garlic for 5 minutes, until softened. With a slotted spoon remove the broccoli and garlic to a large bowl. Bring the water back to the boil, add the pasta, and cook the pasta for about 2 minutes less than the package directions suggest, about 11 minutes. The pasta should be al dente, a little firm.</p>
<p>3. Meanwhile, in a large Dutch oven set over medium-high heat, heat the oil. Add sausage and the garlic cloves from the broccoli bowl, and cook, stirring frequently until meat is fully cooked and no longer pink, about 4 to 5 minutes, if using fresh sausage. (If using fully cooked sausage, cook until surface is golden, about 2 to 3 minutes.) With a slotted spoon, transfer sausage to the broccoli, and drain most of the oil from the pan, leaving about 2 tablespoons. Discard the garlic.</p>
<p>4. Toss drained pasta with sausage mixture. Add beans, stock, 3/4 cup of grated mozzarella cheese and all of the ricotta. Add remaining salt and pepper. Gently toss. Transfer to prepared gratin or baking dish, top with breadcrumbs, remaining 1/4 cup of grated cheese and 1/4 cup mozzarella cheese, and drizzle with olive oil.</p>
<p>5. If making this in advance, allow the mixture to come to room temperature, cover with plastic wrap and place in the refrigerator.</p>
<p>6. Bake for 25 minutes, until heated through and crusty on top.</p>

<p>It&#8217;s a well-kept secret but many people are selling their old cookbooks to raise some cash in these harder economic times. They want to keep it a secret so they don&#8217;t have as much competition.  Because they&#8217;ve found that after selling their own old cookbooks that they can easily pick up the best used, old, rare, vintage and antique cookbooks at garage sales, yard sales, estate sales, etc.<br />
The average person will have no idea that their cook books are valuable and could bring them a lot of money. They just consider them to be old cookbooks with no real value. If they do wonder, they don&#8217;t know how to go about finding out what they&#8217;re worth.  The average antique appraiser is not going to know without a lot of research either.<br />
Vendors, who are in business to put on garage sales, are completely unaware of the value of any of these cook books.  These old, collectible cookbooks go for unbelievable prices of fifty cents to a dollar easily.<br />
You can take advantage of this and earn yourself some nice cash.  You can sell cook books for much more than you bought them for.<br />
Go through your own old cookbooks first, if you have any, or through you mother&#8217;s grandmother&#8217;s or relative&#8217;s books to start with so you can build up a little knowledge.<br />
What to look for.  Although there are hundreds of cook books you can make a lot of money with you want to at first concentrate on the Better Homes and Garden Cookbooks and Betty Crocker Cookbooks. Look for those books that are from the 1950s and 1960s and older.  Also look for the plaid covers or pie covers. You can also look for the Betty Crocker Boys and Girl Cookbooks.  This is a good place to start because they&#8217;re plentiful and still bring in a lot of money.<br />
What you should forget about &#8211; newer cook books are generally not going to be sought after by collectors.  They can easily get these. The only time you can make any money with these is if the publisher did a short print run and it&#8217;s a small publishing company but this is usually not the case. Even then you may not get much for it.<br />
You can sell cookbooks to collectors &#8211; old, rare, antique or vintage cookbooks &#8211; because they buy year &#8217;round and the state of the economy doesn&#8217;t make a bit of difference to them. In fact they know they can find even more as people are finding out that old cookbooks have value and selling them. Of course there&#8217;s a lot more to learn and a lot of secrets in the cook book market but too much to go into in a short article.  You can quickly learn how to sell old cookbooks. </p>

Old, rare, classic, vintage, antique and collectible cookbooks can be a hidden source of instant cash.  You can easily learn how to sell these old cookbooks.  </p>
<p>And many people underestimate the value that these old, collectible cookbooks have, for example Betty Crocker Cookbooks and Better Homes &#038; Gardens Cookbooks, and have never even thought about selling them. There are many other old, valuable cookbooks of course.  But for the purpose of this article we&#8217;ll start with these two well known cookbook publishers&#8217; cookbooks.  They&#8217;ll be easier to research. </p>
<p>Do you have any old Better Homes and Gardens Cook Books? How about Betty Crocker Cook Books from the 1950s, 1960s, or popular editions from 1959, 1961 or older?  Pie or plaid covers? Betty Crocker New Picture Cookbook or Betty Crocker Boys and Girls Cook Books or any others? </p>
<p>Maybe you do have some of these cookbooks now.  Maybe you have some at mom&#8217;s or grandma&#8217;s house or even better at great-grandma&#8217;s house. Perhaps you&#8217;ve seen them at garage sales. A lot of old cookbooks can be valuable-worth a lot of money. Even those of lesser value may sell for ten times the original price.   </p>
<p>Whether you have cook books with binders, hardcovers, plaid covers, or pie covers, you need to do a little research.  You&#8217;ll need to know the title, year of publication, edition (usually printed inside the book in front) and condition, before you can come up with the TRUE value. </p>
<p>You can start by gathering as much of these facts as possible. If any of your old books have been signed by the author or in some cases the illustrator, that&#8217;ll bring up the price significantly. Then, first of all, go to Google and type in the exact title &#8211; for example, &#8216;Betty Crocker Cookbook&#8217; and the year published, and see what comes up. Then try using the same phrase with cook book as two words.  If you have a plaid or pie cover or other distinct cover, then try again adding &#8216;plaid cover&#8217; or &#8216;pie cover&#8217;.  Do it again and type in the edition if known. You may find some others for sale or that have already sold. Then try again with your variations and add the words &#8211; excellent condition, fine condition or good condition.   </p>
<p>Next go to eBay and go to the search feature and then &#8216;completed listings&#8217;. Search by the category &#8216;cookbooks&#8217; and the title of your cookbook and look for similar titles and editions.  Only look at those that have sold, to get a feel for the price range. In terms of pricing, ignore the cookbooks that are still for sale.  Many factors go into why they didn&#8217;t sell.   Finding sold copies in these cookbook listings will give you a general idea of the range they&#8217;ve sold in.  The binding, year and condition are just some of the variable factors. You can do the same with your Better Homes &#038; Gardens Cookbooks.  Then try some of the other old, rare, vintage or antique cookbooks that you&#8217;ve collected. </p>
<p>The deciding factor for price in every case will be the condition of the cookbook. Condition is everything.  Handle your cookbooks carefully.  Collectors and buyers expect cookbooks to have an occasional spot on them.  If they&#8217;re fragile, handle them with white cotton gloves. Never put them in airtight bags or containers, because the moisture content in the pages will cause them to mildew.  You can bag them but leave them open.  In any case protect them. </p>
<p>So you need to decide on the condition of your cookbooks, find the price range of cookbooks that have sold on completed listings and then decide how to price your book.  Be very wary of putting any old, rare, vintage or antique cookbooks on eBay for 99 cents or without a reserve price. You don&#8217;t want someone walking off with your precious book for just pennies. The sold cookbooks on eBay completed listings have a distinct advantage.  You know what people are actually paying for cookbooks and current price ranges.  </p>
<p>As for books that list the value of cookbooks, I have them all.  But I find them worthless because the values do not reflect what people actually pay for cookbooks or the current prices, whether it is Betty Crocker Cookbooks, Better Home &#038; Gardens Cookbooks or any others.  And the cookbook value books go rapidly out of date as time passes since publication. </p>
<p>Besides eBay there are a lot of other ways to sell your cookbooks on the Internet or outside of the Internet.  There is too much to go into in this short article. There are many other trade secrets.  One easy way-there is a free cookbook listing service online, for old, rare, vintage or antique cookbooks where you can list your cookbooks for sale,  yes free of charge.  Collectors and buyers come to the site.  You can continue to sell them using other methods and not wait for a buyer to make contact from the site.  You can always have your listing removed from the site if it sells or you sell it another way. </p>
<p>You can buy and sell old cookbooks easily once you become familiar with one cookbook and you&#8217;ll probably be able to find more of them at garage sales.  With this basic knowledge of how to sell cookbooks, you&#8217;ve just become a mini-expert on selling cookbooks. So go to your cookbook shelves now and see what you already have and start from there.  Once you&#8217;re an expert on Betty Crocker Cookbooks and Better Homes and Gardens Cookbooks you can start researching other old, rare, classic, vintage, antique and collectible cookbooks. </p>

Then try using the same phrase with cook book as two words.  If you have a plaid or pie cover or other distinct cover, then try again adding &#8216;plaid cover&#8217; or &#8216;pie cover&#8217;.  Do it again and type in the edition if known. You may find some others for sale or that have already sold. Then try again with your variations and add the words &#8211; excellent condition, fine condition or good condition.  </p>
<p>Next go to eBay and go to the search feature and then &#8216;completed listings&#8217;. Search by the category &#8216;cookbooks&#8217; and the title of your cookbook and look for similar titles and editions.  Only look at those that have sold, to get a feel for the price range. In terms of pricing, ignore the cookbooks that are still for sale.  Many factors go into why they didn&#8217;t sell.   Finding sold copies in these cookbook listings will give you a general idea of the range they&#8217;ve sold in.  The binding, year and condition are just some of the variable factors. You can do the same with your Better Homes &amp; Gardens Cookbooks.  Then try some of the other old, rare, vintage or antique cookbooks that you&#8217;ve collected.</p>
<p>The deciding factor for price in every case will be the condition of the cookbook. Condition is everything.  Handle your cookbooks carefully.  Collectors and buyers expect cookbooks to have an occasional spot on them.  If they&#8217;re fragile, handle them with white cotton gloves. Never put them in airtight bags or containers, because the moisture content in the pages will cause them to mildew.  You can bag them but leave them open.  In any case protect them.</p>
<p>So you need to decide on the condition of your cookbooks, find the price range of cookbooks that have sold on completed listings and then decide how to price your book.  Be very wary of putting any old, rare, vintage or antique cookbooks on eBay for 99 cents or without a reserve price. You don&#8217;t want someone walking off with your precious book for just pennies. The sold cookbooks on eBay completed listings have a distinct advantage.  You know what people are actually paying for cookbooks and current price ranges. </p>
<p>As for books that list the value of cookbooks, I have them all.  But I find them worthless because the values do not reflect what people actually pay for cookbooks or the current prices, whether it is Betty Crocker Cookbooks, Better Home &amp; Gardens Cookbooks or any others.  And the cookbook value books go rapidly out of date as time passes since publication.</p>
<p>Besides eBay there are a lot of other ways to sell your cookbooks on the Internet or outside of the Internet.  There is too much to go into in this short article. There are many other trade secrets.  One easy way-there is a free cookbook listing service online, for old, rare, vintage or antique cookbooks where you can list your cookbooks for sale,  yes free of charge.  Collectors and buyers come to the site.  You can continue to sell them using other methods and not wait for a buyer to make contact from the site.  You can always have your listing removed from the site if it sells or you sell it another way.</p>
<p>You can buy and sell old cookbooks easily once you become familiar with one cookbook and you&#8217;ll probably be able to find more of them at garage sales.  With this basic knowledge of how to sell cookbooks, you&#8217;ve just become a mini-expert on selling cookbooks. So go to your cookbook shelves now and see what you already have and start from there.  Once you&#8217;re an expert on Betty Crocker Cookbooks and Better Homes and Gardens Cookbooks you can start researching other old, rare, classic, vintage, antique and collectible cookbooks.</p>

<p>Lasagne is a firm favourite with everyone. Unfortunately, with all that pasta, creamy sauce and fatty beef, it can be a huge meal. My version replaces some of the pasta and meat with vegetables, and compared to an additive-filled, processed version, this is much better for the waistline. All the Italian purists that I know will be up in arms, but for me this is a great dish that leaves me feeling full of energy.</p>

<p>Ready in 1 hour 35 minutes<br />
Ingredients<br />
The lasagne</p>
<p>* 1 teaspoon olive oil<br />
* 1 onion, finely chopped<br />
* 2 sticks of celery, finely chopped<br />
* 1 carrot, finely chopped<br />
* 4 cloves of garlic, peeled and finely chopped<br />
* 400g lean beef mince (must be the best quality, or you could try and get a butcher to mince it for you)<br />
* Salt and freshly ground black pepper<br />
* 315ml red wine<br />
* 400g tin plum tomatoes<br />
* 1 tablespoon tomato purée<br />
* 1 bay leaf<br />
* 1/2 teaspoon dried oregano<br />
* 2 courgettes, thinly sliced lengthways<br />
* 1 jar of roasted red peppers in brine<br />
* 4 sheets of lasagne</p>
<p>The cheese sauce</p>
<p>* 500ml semi-skimmed milk<br />
* A good grating of whole nutmeg<br />
* Salt and pepper<br />
* 3 tablespoons cornflour<br />
* 1 teaspoon English mustard<br />
* 80g mature cheddar cheese</p>

<h3>Method: How to cook light but luxurious lasagne</h3>
<p>1. Heat up a big saucepan and add the olive oil. Sweat the onion, celery, carrot and garlic for around five minutes over a medium heat.</p>
<p>2. Heat a frying pan up until very hot and cook the seasoned beef, without any oil, in batches. Then add the beef to the saucepan.</p>
<p>The point of cooking the beef in batches is to get a good colour on it because this adds more flavour.</p>
<p>3. When all the beef is in the saucepan, turn up the heat and add the wine.</p>
<p>4. Cook until the wine has all been absorbed and then add the tinned tomatoes, tomato purée, bay leaf and oregano. Season and simmer for 30 minutes or until rich and tasty.</p>
<p>5. Preheat a conventional oven to 180ºC, or a fan-assisted one to 160ºC.</p>
<p>6. Heat a griddle pan. Season the courgettes and lightly chargrill or sear on each side, then leave on a plate until assembling time. Drain the peppers and also add to the plate.</p>
<p>7. For the cheese sauce: heat the milk up gently with a good grating of nutmeg, some salt and pepper. Mix the cornflour with 50ml of the milk and whisk back into the milk, continuing to cook for two to three minutes until thickened.</p>
<p>8. Add the mustard and half the cheese. Check the seasoning and set aside.</p>
<p>9. Now for the fun part: Take a baking dish and start layering up the ingredients. Start with a layer of meat, then peppers, then meat, then courgettes, then meat, then pasta and finally cheese sauce.</p>
<p>10. Top with the rest of the cheese and bake for 20 to 30 minutes or until bubbling.</p>

<p>&#8220;Forget diets &#8211; they are too depressing for words, as often you deprive yourself of foods you love and then you crave them and before you know it you fall of the wagon, so to speak.</p>
<p>&#8220;It&#8217;s about getting back in the kitchen and cooking again but cleverly&#8230; so if you love pasta dishes then think about making homemade tomato sauces rather than creamy ones and adding vegetables to it to balance the meal out.</p>
<p>&#8220;One of my favourites is a good homemade tomato sauce with chopped black olives, tabasco and chopped anchovies with say tuna.</p>
<p>&#8220;If you want a creamy pasta idea try my carbonara in the book&#8230; it doesn&#8217;t compromise on the flavour but is certainly less calories.</p>
<p>&#8220;With regards to cakes etc&#8230; try making your own because you then know what has gone into it.</p>
<p>&#8220;Try Harry&#8217;s chocolate and beetroot cake as it is so intense that I even struggled to eat more than one slice, and I love chocolate and cakes.</p>
